ITK3: Cinnamon Crumble Banana Bread
This recipe creates a moist banana bread that’s not too fluffy or too dense and you can adjust the sweetness based on your taste! Although optional, the crunchy cinnamon topping elevates the dish by adding warmness with the cinnamon and texture.
Ingredients
Banana Bread
~ 2 to 3 over ripe bananas, mashed (about 1 1/4 to 1 1/2 cups)
~ 1/3 cup of butter or margarine, melted
~ 1 teaspoon baking soda s1
~ 1/8 tsp of salt
~ 3/4 cup of sugar s2
~ 1 large egg, beaten
~ 1 teaspoon of vanilla extract
~ 1 1/2 cups of all purpose flour
Cinnamon Crumble (optional)
~ 1/4 cup of butter or margarine, melted
~ 1/2 cup of brown sugar
~ 3 tbsps of all purpose flour
~ 2 tsps of cinnamon powder
*Note: you can also add mix ins like chocolate chips, chopped pecans and walnuts or even dried fruit like raisins. Simply mix into dough when you add in flour.*
Method

2)Mash bananas with a fork until smooth. Then add melted butter and mix.

6)Grease a loaf pan (or any pan you have on hand) and pour banana bread batter into pan.
7)Sprinkle cinnamon crumble on banana bread batter.
8)Bake for 45 mins to 1 hr or until tester or skewer inserted in center comes out clean.
9)Remove from oven and allow to cool for a few mins. Best served warm.
Substitutions
1)Baking Soda: If you only have baking powder on hand use 3 times the amount of baking soda needed. In this case, use 3 tsps of baking powder. If using baking powder, be cautious about overmixing.
2)Sugar: You can use as little as 1/2 cup of sugar if you have less of a sweet tooth and up to 1 cup of sugar if you love sweet baked goods.
Look at that gooey inside!
